Ingredients

  • 1 large Black Sea Bass, cleaned

  • Olive oil, for drizzling

  • 3 cloves fresh garlic, finely chopped or crushed

  • 1/4 cup Italian-style bread crumbs

  • 1/2 stick butter, melted

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon dried oregano

  • Old Bay seasoning, to taste

  • Freshly cracked black pepper, to taste

  • Kosher salt, to taste

Equipment

  • Large sheet pan or cookie sheet

  • Parchment paper

Instructions

  1. Preheat oven to 350°F. Line a large sheet pan with parchment paper.

  2. Pat the fish dry inside and out. Trim the dorsal and side fins if desired. Using a sharp knife, score both sides of the fish with shallow crisscross slits.

  3. Place the fish on the prepared sheet pan. Drizzle lightly with olive oil and rub evenly over the entire fish.

  4. Season generously with salt, black pepper, oregano, and Old Bay. Sprinkle the garlic and bread crumbs evenly over both sides of the fish.

  5. Drizzle the melted butter and lemon juice over the top. Finish with an additional light drizzle of olive oil.

  6. Bake for approximately 25 minutes, or until the fish flakes easily with a fork and is cooked through.

Serving Suggestion

Serve alongside rice, black beans, and a fresh salad. Pairs well with a cold beer or crisp white wine.
